My Favorite Veggie Soup
2 cans reduced sodium broth (vegetable or chicken)
1 cup water
1 medium potato, peeled and cubed
¼ cup barley
1 medium onion, carrot and garlic clove, chopped
1 celery rib, chopped
1 bay leaf
1 tsp each, savory, basil, oregano
1/8 tsp pepper
Salt to taste
1 can navy or butter beans with liquid, do not drain
½ cup pasta
In large saucepan, combine all ingredients except beans and pasta. Bring to a boil, reduce heat, cover and simmer for 20 minutes or until veggies are tender. Add pasta and beans and cook for 10 minutes. Discard bay leaf before serving.
