Cilantro Tofu Curry

Cilantro Tofu Curry (serves 4-5)
2 tsp olive oil
1-2 inches of fresh chopped ginger root
3 cloves minced garlic
½ cup chopped green onions
2 Tbsp cilantro stems, chopped (save leaves)
2 stalks chopped celery
1-2 tsp curry powder
16 oz firm or extra firm tofu, cut into ½” pieces
15 oz can broth
Hot cooked Rice

Heat oil over medium heat. Add ginger, garlic, cilantro stems, ¼ cup onions and celery, cook 2 minutes. Add curry powder and broth. Bring to a low boil, then reduce heat, add tofu and simmer about 15 minutes. Salt to taste.Serve in bowls over rice and top with remaining onions and cilantro leaves.
