Try this quick, healthy and easy alternative to your favorite restaurant. Although it's made with tofu, it's so flavorful you won't miss the chicken! It only takes 20 minutes to prepare and cook. Serves 6.
2 Tbsp oyster sauce
2 Tbsp soy sauce, low-sodium
1 tsp splenda or truvia
1/2 tsp white pepper
2 Tbsp rice wine
2 tsp sesame oil
2 Tbsp grapeseed or peanut oil
16 oz firm tofu, drained and cut into 1/2" pieces
2 red bell peppers, cored and cut into chunks
1 smalll yellow onion, diced
2 tsp grated fresh ginger
1 cup cashews
In a small bowl, whisk the oyster sauce, soy sauce, splenda, white pepper, rice wine and sesame oil. Set aside.
In a large, deep skillet or wok over medium-high heat, heat grapeseed or peanut oil until shimmering. Add the red peppers, onion and fresh ginger and stir-fry for approximately 5 minutes. Add tofu, sauce and cashews and cook until heated. Serve with brown rice, rice noodles or buckwheat noodles.
